Recipes For a Simply Vibrant Detox

Give your body some power food after all that pleasure food from the holidays.

And these yummy recipes are also a great way to use leftover turkey!

1 1/2 cups brown rice
2 cups of water
1 tsp kosher salt

Pre-heat the oven to 375 degrees F. Place the rice into a glass baking dish. Bring the water to a boil in a covered saucepan. Once the water is boiling, pour it over the rice, stir to combine, and cover the dish tightly with and ovenware cover or heavy duty aluminum foil. Bake on the middle rack of the oven for 1 hour. After an hour, remove the cover and fluff rice with a fork.

For extra protein, add grilled chicken or leftover turkey (great way to use leftovers after the holiday season).

Once your brown rice is made, you can add it to this dish:

Brown Rice Roasted Broccoli and Cherry Tomatoes

1 cup of oven cooked brown riceScreen Shot 2015-12-28 at 1.56.12 PM
1 1/2 cups of chopped broccoli
1 cup of cherry tomatoes (halved)
2 tbsp olive oil
Juice from half a lemon
Salt
1 clove of garlic
Black pepper

Pre-heat the oven to 425 degrees F. In a large bowl toss the broccoli florets and minced garlic with olive oil and lemon juice until lightly coated. Sprinkle the salt and pepper over the broccoli and toss to coat. Arrange chopped broccoli in a single layer on a parchment lined baking sheet. Roast for 16-20 minutes, until cooked thoroughly and nicely browned. Served with cooked brown rice and chopped fresh tomatoes.
